As discussed, the EDIT PRODUCT button doesn't work on Squarespace 7.0 currently. Squarespace 7.1 has a different Edit Product button and is unaffected) The most convenient workaround I found was to click MANAGE PRODUCTS and then double-click the product in the left pane.
