Acceptting pre-orders for a product on e-commerce

Hey guys, I'm trying to set up my first e-commerce, and would like to know its its possible accept a pre-order for a product. Let me explain this, we're a small wine and olive farm in Tuscany, since we will start with a social media ad campaign soon I would like the idea to pre-orde your freshly made olive oil, that will be ready around November. 

One possibility would be to proceed as a normal checkout, let the client pay and the ship when the oil will be ready in November, but, is there a proper way? or an extension that helps you with that?

My ideal I dea would be that a customer proceed with the pre-order, entering his card details, and then as soon as the oil will be ready the card will be charted with the amount and immediately shipped

There's no built-in way to accept pre-orders for products that are out of stock. It isn't possible to vault payment card details and charge the card later.

You can capture interest for the product by setting the stock level to zero and enabling product waitlistsPotential customers can submit their email address on the product details page and they'll be sent an email when the product is in stock, encouraging them to place an order.

If you choose to sell the product before it is available, payment must be taken at the time of the order. It's also a good idea to explain the availability/delivery/shipping information in the product description and link to your store’s terms and policies for more information about order cancellations, shipping, and returns.
