I was just wondering if there was an automated way to change an inventory status to hidden when a product is sold out rather than having to do this manually.

It isn't possible to change the product status when a product sells out, but you can hide the product(s) from the Product List Page (PLP) by adding this to Design > Custom CSS:

/* Hide sold out products on PLP */
.grid-item.post-type-store-item.sold-out {
  display: none;
}

The product will then automatically reappear when stock is replenished.

Circumstances can be different from store to store but, for the benefit of anyone reading this, I'd usually recommend showing the sold out products, not hiding them. A bold 'sold out' label typically communicates that your products are in demand and could encourage sales.
