Availability of products according to sizing

When you post a question, it's always helpful if you include a link to your site/page in the post so that we can understand the issue a little better. However to generalise, you can set the stock level of each size when you edit the product (click Edit All in the Inventory section of the editor).

If some sizes will never be available, for example if the products are preloved items, it's a good idea to remove the sizes that will never be available by deleting that row. If the items are new and other sizes will be restocked, keep the row but temporarily set the stock level of that size to zero.
