Removing the Qty dropdown from one store but not the another.

Hi, 

Can a stores category navigation be modified so that it shows ALL of the main categories permanently? For instance, I have three main categories = "By Color" "By Collection" and "A-Z" when you click into a main category i.e. "By collection" it will take me to that category only without the ability to navigate to other main categories. It only show the active category and "veiw all"...I would like it to show all main categories for easier navigation rather than "view all" ....

Can anything be done?
