Using CSS to customise Acuity Scheduling, I would like to know if it is possible to apply such changes to individual pages, rather than globally ?

It depends what you mean by "individual pages". Each intake form has its own selector, for example [data-form-id="123456"] to allow you to style individual intake forms.

I am not familliar with CSS, I take it then that I could have something similar to the colour paletes on the GUI side of Squarespace and just link to the colour profile I wanted ?

Basically, I wanted one set of colours for one page, and another for a different one.

Is that possible using id's please i.e. page specific.

If you are on the Scheduling "Powerhouse Plan" then Scheduling elements can be styled with CSS but you'll need to be familiar with CSS or have assistance from someone who is. It is difficult to be more specific about what is and isn't possible without specific details, like URLs and confirmation you are on the "Powerhouse Plan".
