I wondered if I'd be able to reposition my logo to the top centre - then move the nav burger to the left - and the shopping cart to the right?

Yes. Just select the Header Layout when you edit the header.

I can't believe that was already there given I've had to code the shopping cart and nav already.

However, it doesn't work for desktop. Nav stays right.

And mobile will need some shop cart position adjustment.

Is it possible your custom CSS is interfering? You could remove (save a copy somewhere) or comment it out and see how things look then.
