Decreased quality for background videos on mobile

If i put up an 1080HD video on youtube and link that to squarespace it will show as a 720SD on mobil, which is fine, but worse on the desktop. But if a put up an 2160-4K it will show fine on the desktop but 360 on the mobil! which is worse then the 1080HD why?? -
I wanna get rid of the "All" category for video content and when i click on a video i dont want to have next video under the main one. And is it possible to have two seperat layouts for computer and mobil? When i change something in mobil view it changes in the computer view to?
