Add options at checkout

Hi. 

Since we cannot add more than 250 variants for a product. Can we add options at checkout page to add $$ to the card 

I've created a website for a tour company which I need to add "number of passengers". Since I've crossed the variant limit, is there any way I can add it to the check out page. But this should affect the total price
