Is it possible to have a date picker for a product, and if the date they select is under a certain amount of time, it adds a fee onto the purchase price?

Hello!

I have a client who runs a flower farm. She sells pressed flowers, and these orders have a lead time of 21 days. We have put these details in the product listing, and if they require the product urgently, we currently ask them to send an enquiry via a form.

Customers aren't doing this however and are just placing orders even if they have tight turnarounds. 

My question is, is it possible to add a date picker to a product before they add it to cart, and if their date is less than 21 days away, an urgent fee is applied to the cart?

Seems like a good use of variants.

You may also want to want to add the price right into the variant menu to reinforce the message as well as text in the description. People have a tendency to believe things work the way they imagine they work and not how they actually work.
