@Lucypaints Click on the Content tab in your screenshot and you'll find an icon next to each individual image that you can click to add a title to the image.

Not at all. There are many improvements that they could make to the Gallery Block Editor to make it easier to use but, as Gallery Blocks aren't fully supported on version 7.1, they aren't receiving any love or updates to improve them.
