I'm trying to create some sort of column or table to replicate something similar to the below.

A table or column or chart is a very basic feature that Squarespace seems to be lacking why is this?

Try Table Block

If you need both table + 3 tabs (Leading Projects, BSC Projects,..) You will need to use a Tab Plugin + Table Block

You can also use a table generator, then copy table code into Code Block
