How do I get individual store item pages to show up in google search results?

I believe I have done everything right to link my site to google, make it findable, and setup automatic crawling, etc., but for the life of me, the individual item pages within my store do not appear in search results.  I'm using the Montauk template and what started as a blog 9 years ago has morphed into an online store.  The tricky part is I'm selling vintage watches, so each item is one and done.  But because there may only be a handful of some of these ever made in the world, and the watch community searches using the model (reference) number etc., I want each watch to appear in search results.  I have the URL's and SEO titles filled out to facilitate this, and this works for other dealers, but my individual product pages don't appear in search results, any clues how to make this happen?

I feel like I've done everything correctly, submitted sitemaps, indexed, etc., however, the pages for the individually listed items don't appear in google search results, which is what I'm trying to solve for.  For example, a few of the items I have listed are fairly rare, and if filtering google results by time, say the last month or this year, I should be among the top results, but my pages are not showing when even my instagram pages are appearing in the search results for the same items, any thoughts?
