Select a specific item from a Dropdown Menu (to exclude it from a general instruction)

Hello,

I'm trying to make a multilingual website without using weglot.

I'm following the steps from here: https://www.bradgood.net/articles/multi-language-content-on-any-squarespace-template

Everything seems to work correctly. But there is a part on the code where i have to exclude some items from the dropdown menu. Those elements that i don't want it to disappear.

I'm talking exactly about this part of the code:

  $('.exclude-me,.exclude-me a').addClass('exclude');
  $('.sqs-svg-icon--list a,.SocialLinks-link,.header-menu-controls-control').addClass('exclude');

So, my question is how to specify exactly one item from the dropdown menu. Specifically I need the two languages (CATALÀ and CASTELLANO) to be always shown in the menu IDIOMA. 

I understand that I need to exclude them from the general instruction from before, but I don't know how to indicate it.
