Setting up a store without checkout, cannot save products, error message "Cannot Save Product An unexpected error occurred. Please try again later" HELP!!

Hi, I'm setting up a car parts website with product categories and pages but no checkout as we want visitors to send us a list of the items they want. Every time I try to create a product listing, I get the message 

"Cannot Save Product

An unexpected error occurred. Please try again later.

I have tried setting up fulfillment profiles but they are not appearing on the 'create product page'"

I have turned off the checkout function.
