Using Acuity for a "one opportunity a month" setup

I have a one-person editing business; I do a couple of different kinds of appointments, both 1-1 and "please schedule me for an edit". The 1-1 scheduling is easy enough, but I have the following use case that I can't quite figure out.

I have two different types of edits: short edits (5-10 pages), which I want to do a certain number of per month -- let's say five for the sake of argument -- and long edits, which I only want to do one of per month.

I can create resources, but how do I make sure that the count resets each month? I don't want to it be "okay, someone scheduled a long edit in September, so now no one can schedule another until I've finished this one".

If I could easily set up a calendar so I had one open appointment a month, that'd do it, but I don't see an easy way to do that.

I set up the short edit resource, but It tells me "This resource doesn't limit anything because you only allow 2 appointments at a time on your 2 calendars, but this resources allows 5 appointments at a time to use it."

I am not sure what this is telling me, or what I need to do so I can say "I have five opportunities to do this per month".
