How to Find Contacts for Abandoned Cart???

I am setting up an e-commerce site and would like to collect contact information from any client who decides to add an item to their cart.

For example, within custom forms for specific products, I make it mandatory to type in contact info when adding an item to the cart. Where does that contact info go?
