Best UX for setting up courses with limited enrollment?

I have a client that offers a 6-week course with limited enrollment. She'd like to set it up on SQSP so that when people register for the course, which has numerous start options/cohorts every month, they pick a certain cohort. The limit for each cohort is 8 people.

We had discussed using an events calendar to show upcoming courses, so people could pick their start dates. But SQSP doesn't allow event registrations to be capped. So that doesn't solve easily keeping track of enrollments.

Would using Acuity/Scheduling be a better option using the classes feature?

I figured that the simplest UX would be for people to sign up using the digital products block and then be redirected to Acuity to pick their start time, assuming that once the max quantity for the course is reached, that time would no longer be an option.

Is that a viable setup? Is there a better way to set this up?
