Invoicing and collecting payment for a service

Forgive me. I'm new to this... I'm hoping I can ask a question here. Can I invoice a client for a booking fee, and then invoice the client again once the service is completed for the remaining balance without having set up a store? I do have a payment method (Stripe) set up to accept money. And can I invoice the client for the booking fee, where they pay online and then when service is rendered collect the same day. So then collect the remaining balance? Is there a good simple method to do this? Any suggestions are welcome. My service sales will be pretty simple.
