Should I Turn AMP Off For Blog Setting?

I keep receiving reports from Google Search Console that many of pages (225) on my site (mostly Blogs) are not being Indexed due to "Alternate Page With Proper Canonical Tag" and it relates to the AMP Setting. 

What would happen if I turn AMP off? As it stands with the new Fluid Engine Update I have to build/design each page first for Desktop and then go back to Mobile view and redesign/reformat. I am NOT a fan of the Fluid Engine because I specifically am using Squarespace because it had auto-responsiveness for Mobile. 

It also says an error for "Video Page Indexing" that I do not understand why.

All screenshots attached, any guidance is appreciated!

Anyone having the same issues/concerns? It'll take hours to go through each URL and request Google to Reindex.
