How do you make a product where the customer creates the details?

I have just started with Squarespace and want to create a store that relies almost solely on the creation of custom orders that we would then fulfill at a later date. Is there any way to do this? Furthermore, would it be possible to allow the user to view their orders in progress? Thanks.
