How Do I Make a 7.0 Site As A New User

I just want to re-create a Weebly website as a new Squarespace user with a 7.0 template. As a person that's made a handful of other sites over the years, I'm familiar with the 7.0 workflow.  Can I launch a site anew with 7.0?  If so, how?  I don't see that option anywhere on Squarespace.

Boy, I hope there's an easy answer here...it's been 3 stagnate hours of trying to fit things into 7.1 and I just don't want to bother anymore.  I could have been done building the whole website on 7.0 by now.

The 7.1 templates are weird to me.  Seems like they all have header items that I can't for the life of me figure out how to remove.  Also, the way it's implementing fonts is beyond goofy to me.  

I could easily re-make this basic website (www.prairieprophecy.com) in 7.0, but 7.1 has me just scratching my head.
