Hi, is there anyway to add a "notify me" button for customers to enter their email addresses when an item they are interested in is out of stock? Using (Version 7.0– Brine family (West template). Thank you!

Yes. You can enable the Product Waitlists feature, to notify interested shoppers when sold-out products are back in stock. When enabled, shoppers can submit their email address on a Product Details Page (PDP) when the product is sold out. After you replenish your inventory, you can click Email all in the Waitlists panel to email everyone on the waitlist. Note that you cannot view or export the email addresses from the list.

Thank you! This is really helpful. Even if I can't export email addresses, is there a way to at least see how many people are on the waitlist? So that I can replenish stock according to demand?

Yes, you'll see the number of signups next to each product:
