Product Collection

I am wanting to add a product that is available to ‘collect/pick-up’ from store but I need it have have a cut off order time and a collection date. 
 

how do I get about doing this?

There isn't a built-on feature that can do this. A developer could build something like this with code but it would need to be implemented on the product page (in the Custom Product Form) or at the cart stage (more difficult) because code cannot be added to the checkout page.
