invoice without payment

Hi

Is it possible to set up specific items (in this case for our wholesale products) for customers to order on the website and receive an invoice but allow them to pay by check later (i.e. not have the pay by CC or other digital means)?

At first, I thought maybe it should just be an option for any customer at check out, but that is problematic. We only want it for wholesale items for our wholesale customers.
