Adding inventory that isn't actually for sale?

I have a similar question as those listed above. Several of my original paintings are only available for purchase at an art gallery, not my website. The gallery has asked me not to offer them for sale on my website. However, I don't want to mark them SOLD on my website since technically they aren't sold. I don't want to "hide" them on my website because I do want people to see them and go down to the gallery and buy them. Is there anyway to change "SOLD" to another word in some instances? I would like some items to say "AVAILABLE AT THE ARTISTS GALLERY ONLY".  Or can I prevent them from being able to check out, maybe that could work if I could disable the check out option? Any suggestions would be greatly appreciate!

I suggest hiding the quantity and add to cart. Please see the following.
