How to change the default text in the product variant dropdown

Hi there,

I'd like the default dropdown text on a product variant to say something like "Choose an Option"  rather than "Select {variant title}"

Since the two variants are: 'Yes' and  'No'

I thought about changing the Variant title, but this would require a lot of work since hundreds of products were imported with same naming convention. (For reference, the options are for whether the customer wants to include a case for the item)

Additionally, if I don't choose a variant option I get the message shown in the 2nd screenshot. Ideally, the message would say "Please choose an option or something logical.

I currently use Shopify with a theme that uses radio buttons instead of a dropdown for variants --so if anyone knows of an extension or method to use that instead, I could do it that way. I'm not adept at coding but I can figure it out if someone can point me in the right direction. I haven't found anything on forums so far.
