I always ask for the following:

  • Website editor and analytics access
  • Google Search Console with full access
  • Google Analytics with editor access

It will depend upon what they're doing, but you can always give more access if the ask for it if you want to start lower!

I would like to give them access to the analytics but am not keen for them to have access to the commerce analytics. They seem to be bundled together, is there a way to only give site analytics without the commerce. Any advice?

No, this is not possible. You can give contributors access to all analytics or none.
