You cannot set a minimum or maximum order quantities on Squarespace, because customers can change quantities on the checkout page, and this cannot be prevented. To be clear, someone could write code (JavaScript) to set a minimum or maximum quantity on the product page, but as I mentioned above, this can be undone by the customer at the checkout stage.
