How can I remove "We will be in contact shortly.." from the Order Confirmed email to customer

...line of copy on the customer receipts. 

As this is the Order Confirmed notification, you'll find this setting in Commerce > Customer Notifications > General Orders > Order Confirmed.

Click EDIT EMAIL and then click on the text within the email. A side panel will appear where you can edit the default custom message for different product types.
