Google Search Console listing limited number of valid items in Product Snippets

Hi, I have realised I need to improve my site's product structured data if I am ever going to get a viable amount of traffic. I also appreciate that my home page needs to be more search friendly but my immediate concern is that Google Search Console, despite having my current sitemap, is listing only 15 valid items of my 84 products on its Product Snippets tool. There are 0 invalid items so I am assuming my unlisted products somehow lack a data structure that helps the 15 products get seen. Any insights on how to get more products listed as valid items would be appreciated.
