How to start item count at zero instead of one

I have an item in which you can pick different letters and number. The problem is that the item count starts at 1, so when they click on a number or letter they want, it adds it to the existing 1, so now it shows 2 items instead of 1. I'm wondering if there is a way to start the item count at 0 instead of 1.

We sell cheese and meat trays. One option is to have the tray in the shape of a number or a letter for personalization. I have boxes they can check to pick the number or letter tray they want, but when they do that, the item count for purchase goes to 2, because the item count starts at 1 when you open the product page. If I could have the item quantity start at 0, then when they pick, let's say the number 9 tray, it would tally 1 as the quantity. As of right now, If they pick the number 9, it adds it to the default number of 1, so now the total quantity for purchase is 2. Right now I avoid that by not attaching a price to the option box, but now they have to manually adjust the quantity instead of it being automatic.
