Universal filter, sort by categories then tags?

Hi everyone,

My store sells rock climbing gear https://www.extremegear.org/shop . 

At the recommendation of this forum, I installed the universal filter plugin, which was surprisingly easy. Thanks! I am having a hard time following the instructions from their website, so please bare with me.

Currently, the "tags" dropdown displays every tag that I have ever created, as it is supposed to.

1) Is there a way to exclude some of the tags from the drop down?

2) Is there a way to filter the tags based off of the category? Or better yet, create a custom list of tags for each category/subcategory? Such as when someone clicks on the dynamic rope category, only tags that are related to that category are displayed, or say just "rope diameters" are displayed.

He used Universal Filter Plugin to create Search/Filter with Tabs/Categories. You can also use plugin to create filter with Price, Variant....
