How do I change the by Squarespace by default entered Canonical Tags?

Using the "store" template, the problem is, that Squarespace adds by default a canonical tag for each product category page (e.g. /shop/product-category/) to the product overview page: /shop/. Which leads to me not really being able to work on optimizing product category pages, as they were not able to be indexed in Google.

Any tips on how to get around this and to edit these canonical tags on Squarespace?
