Different Online Stores Every Month

I'm working with an organization that only wants their store open every 3 months. Can I launch a different store under the same payment structure for the other 2 months while the other store is closed? Is there any better way to do this?

Actually no. You can have as many store as you want, however, each of them needs to have a separate account.
