the quantity is limited to 500, by default it seems. Can this be changed to allow for a higher quantity to be input at checkout?

No, this cannot be increased. The 500-item limit is a Squarespace Commerce limitation.

has [the cart limit of 500 items] been changed yet?

This hasn’t increased. The workaround is typically to add a quantity to a description, so that the cart quantity is reduced. For example, instead of individual glasses, you’d offer 12 glasses. If someone requires 480, they can order 40. It’s not ideal, but this isn’t something that can be changed.
