Mobile Dark Mode Colour Scheme Issue

When on dark mode on a mobile, instead of inverting the colour scheme across the board I get colours that aren't in it at all.

The text on buttons becomes light pink - a colour that isn't selected as an option in the theme.

Can anyone offer any advice on how to target this?
