Is there any way to change the format of the Galapagos main blog page to show image thumbnails, ideally with the posts as a grid instead of a list?

You can use the standard layout of Squarespace

After that, you can choose the image to the left, change image size.

Edit your post > Drag the image to the left of text

In this case, you can consider setting the style of max-height for text and hide the remaining

The Galapagos template is now very old (Nov 2013) and has fewer style tweaks than newer templates. With this template, blog pages display as a list of vertically-stacked posts. There isn't an option for an alternative layout. 

However you may want to try using a Summary Block instead. You can use Summary Blocks to display your blog content in a layout that isn't otherwise available, including Grid and Wall.

To do this, create a new page, add a Summary Block and then connect it to your blog like this:
