Express Checkout + Keep Shopping?

Hi,

Is it possible to have express checkout activated for a 'service' store, but have the regular option where you can continue adding items to the cart for an 'item' store? Or are any changes site-wide?

Better yet, for both stores, is it possible to have the default be to continue shopping but add a button that says 'check out now'?

Additionally, when I enable 'express checkout' it works on my phone but acts like it's not enabled on my desktop..

Express Checkout is a site-wide setting.
