Have you unchecked Let customers buy multiple service products in the checkout settings? This will prevent customers from buying more than one of any service product at a time. If this helps, ple

Have you unchecked Let customers buy multiple service products in the checkout settings? This will prevent customers from buying more than one of any service product at a time.
