Alternative Checkout Options

We sell professional services to educational customers who mostly use Purchase Orders to pay. Is there an alternative checkout option in SS that would accept the order without a credit card transaction and generate a bill/invoice to the client instead?

We use a third-party tool for event registration and would love to bring it all to SS for easier management.
