Square "Food Item" Checkout (disable automated pick-up/delivery dates)

Squarespace commerce won't allow gratuity, so I created a square webpage to look like it's part of my SS site to handle food item sales. However, square (and every other software I have come across requires a led time on food prep. which doesn't align with my 3/day week menu. It never will and I cannot find a way to disable it in square or find another service to sell items that don't require a pick-up/delivery time. People order in advance for a Tuesday, Thursday or Sunday for pick up or deliveries on each day. Sometimes placing the order for all 3 days at once. Any suggestions welcome as this is driving me nuts 🙂 THANK YOU!
