Question is, should Squarespace's SSL override this, or does the client have to purchase the SSL "bolt on" from 1&1?

The SSL service is completely independent of your domain provider's offerings.

When your domain's DNS settings (A, CNAME and so on) have taken effect (it can take 10 minutes to 72 hours) then you should be able to enable SSL within Squarespace. If it's not working, get in touch with Squarespace Customer Care as they can logon to your site to troubleshoot.
