Can I replace the cost with POA within Commerce

Hi!

I have been able to navigate the Commerce site pretty well until now!

I have no problem listing items for sale but a new listing I have cant show the price. This is because its a custom item so dependent on their choices. I am using the shop as advertising really rather than the total click through and purchase

Also is there a way to remove shipping on one product? A large cake cannot be shipped via the post so dont want anyone to be able to select this option.
