How do I layout my page for extensive products?

As a party store i have a lot of objects that share "tags" but are of different types. How do i reduce the product page and allow for a customer to filter? Is there a filter button i can add as a sidebar or as tabs? I know there is a main tag that I can sort of utilize, but it wouldn't be effective. I could utilize it to separate by theme or type; napkin vs balloon; New Years vs Valentine. If there was a filter that did exactly that, THAT would be great.

Ex.) Table napkins, New Years Table napkins, Thanksgiving Table napkins...

Ex.) New Years balloons, Happy Birthday Balloons, Christmas Balloons.

Also problem, since I have a physical store my product page is meant to just showcase my products with their physical pricing model.

I dont intend or want to ship or sell anything online. Its meant to demonstrate the product variety and availability. Can i still use the "STORE" page to display products? Or does it have to be done under the "GALLERIES" template page?
