Creating a Pay as Your Feel Store - is it possible?

Hello

I am trying to create a pay as your feel store as an experiment with my prints and artworks. I've created a shop before on my website. I've created multiple variants so that buyers could choose one of the fixed prices but if there is only one artwork and multiple variants does it not mean that it looks like there are multiple artworks and thus messes up any kind of inventory? 

So for example if someone wanted to pay £100 but another person visited at the same time and chose the £80 option could they both buy it even though there is only 1 of the product?
