This isn't really practical when your products have variants, as this screenshot of your site shows. When products have variants, customers cannot click the 'Add to Cart' button until they have found the 'size' selector and chosen a valid (stocked) size. If you fix the variant selector in addition to the cart button, the space available for scrolling will be much smaller, reducing usability. The reference site you mentioned isn't Squarespace but this has been designed to work this way by combining variant selection with the cart button.
