Hide Sold Out from product page

Good evening all,

At this point in my business I only have Square POS as a payment processor however, I would still like to sell products online. What I want to do is create a form in our shop page where the buyer can select products from a Check Box list. Once the buyer has submitted the form we will reach out to them to process payment.

To do this I though I would need to put inventory for all products to 0 in order to stop the buyer from being directed to a checkout page. Once I do that the Sold Out text shows up on the products in the shop.  I would like to remove that so buyers do not move on thinking all our products are sold out. Is there a way to remove that? Is there a better way to do what I want?

Have you implement it? the sold out message can be hid with css

I figured out I can hide it by using the track inventory toggle.
