I think the easiest solution is going to be to convert all your vertical images from 2:3 to 3:2 ratio. At least the ones where you are losing critical visual information.

Following is a mock up of how it might look.

Normally when you are at the following item (Dee Triangular) you see something like...

And then when you hover you get the truncated image...

If you replace your 2:3 hover image with a 3:2 version you get the following on hover.
