Product Categories to align to the middle on Mobile

I regret upgrading to the new product category system. 

I need the Product categories to align to the middle, and not to the left on mobile.

I am also wondering why I can't see all the subcategories on desktop. Is there a way to show categories and subcategories without having to click on each individual category to reveal the sub groups?
